When I started eating low carb, I thought I had to give up that gooey coconut and pecan topping for good.

That is why I created these keto german chocolate cookies. They give you all the rich chocolate flavor and chewy texture without any of the sugar.

For The Chocolate Cookies
- 1 3/4 cups Almond Flour
- 1/4 cup Unsweetened Cocoa Powder
- 2 tbsp Coconut Flour
- 1/2 tsp Baking Soda
- 1/4 tsp Sea Salt
- 1/2 cup Unsalted Butter
- 1/2 cup Allulose
- 1 Large Egg
- 1 tsp Vanilla Extract
For The Coconut Pecan Topping
- 3 tbsp Unsalted Butter
- 1/3 cup Heavy Cream
- 1/3 cup Brown Monk Fruit Sweetener
- 1 Large Egg Yolk
- 1/2 cup Unsweetened Shredded Coconut
- 1/3 cup Chopped Pecans
- 1/2 tsp Vanilla Extract
How To Make
Step 1
Heat the oven to 350°F and line a baking sheet with parchment. Whisk the almond flour, cocoa powder, coconut flour, baking soda, and sea salt together.
Step 2
Beat the softened butter and allulose until creamy. Beat in the egg and vanilla, then stir in the dry ingredients.
Step 3
Scoop 12 dough balls onto the pan and flatten them to about 1/2 inch thick. Bake for 10 to 12 minutes, until the edges are set, then cool completely.
Step 4
Melt the butter for the topping in a saucepan over medium-low heat. Whisk in the heavy cream, brown monk fruit sweetener, and egg yolk, then cook for 3 to 4 minutes until thickened.
Step 5
Stir the shredded coconut, pecans, and vanilla into the warm caramel mixture. Cool for 10 minutes so the topping becomes spreadable.
Step 6
Spoon the coconut pecan topping onto the cooled chocolate cookies. Let them stand for 15 minutes before serving so the topping settles into a thick, chewy layer.

Tips
Shape the Cookies Before Baking
Low carb cookie dough does not spread out on its own like traditional cookie dough. You will get the best results if you press each ball down to your desired thickness before they go into the oven.
I recommend making a slight hollow or well in the center with the back of a spoon. This gives the coconut pecan topping a nice place to sit so it does not slide off the sides.
Toast the Coconut and Pecans First
From my experience, taking five minutes to toast the shredded coconut and chopped pecans in a dry pan unlocks a whole new level of flavor.

It gives them a nutty crunch and deep aroma that makes these taste just like a classic German chocolate cake.
Just keep the heat on medium and stir them constantly so they do not get too dark.
Watch the Allulose Carefully in the Oven
Allulose browns much faster than regular sugar or other low carb sweeteners. I’ve found that these cookies can go from perfectly golden to overly dark very quickly.
Start checking them around the 9-minute mark. As soon as the edges look set and light golden brown, pull them out even if the centers still feel a bit soft.

FAQ
Can I use erythritol instead of allulose for the cookies?
You can substitute erythritol, but your cookies will turn out noticeably crisper rather than soft and chewy. Allulose holds onto moisture and keeps keto baked goods soft, whereas erythritol tends to crystallize as it cools.
If you choose erythritol, use a powdered version so the cookies do not end up with a crunchy or gritty texture.
