- 4 oz Sugar Free Dark Chocolate, Chopped
- 2/3 cup Granulated Allulose
- 2 Large Eggs
- 1 tsp Vanilla Extract

For the Cookie Layer
- 1/4 cup Butter, Softened
- 1/3 cup Golden Monk Fruit Sweetener
- 1 Large Egg
- 1 tsp Vanilla Extract
- 1 cup Almond Flour
- 1 tbsp Coconut Flour
- 1/2 tsp Baking Powder
- 1/4 tsp Salt
- 1/2 cup Sugar Free Chocolate Chips
- Flaky Sea Salt, For Topping
How To Make
Step 1
Preheat the oven to 350F and line an 8×8 inch pan with parchment paper. Melt 1/2 cup butter and the chopped chocolate together in the microwave in 30 second bursts, stirring until smooth.

Whisk the allulose into the melted chocolate, then whisk in 2 eggs and 1 tsp vanilla for a full minute until glossy. Stir in 1/2 cup almond flour, cocoa powder and 1/4 tsp salt until smooth. Spread the brownie batter evenly into the pan.

For the cookie layer, beat the softened butter with the golden monk fruit sweetener until creamy, then beat in 1 egg and 1 tsp vanilla.

Tips
Whisk the Eggs Well for a Glossy Top
When you add the eggs and allulose to the melted chocolate, whisk them vigorously for a full sixty seconds.
From my experience, this step dissolves the sweetener and helps create that thin, shiny crust on the brownie parts that peek through.
If you just stir it quickly without whisking, the top will turn out dull and matte instead of glossy.
Let the Melted Chocolate Cool a Bit
After melting the butter and dark chocolate together, let the bowl sit on the counter for about five minutes before whisking in the eggs.

You’ll get the best results if the chocolate is just warm to the touch rather than piping hot.
If the mixture is too hot, it can start cooking the eggs on contact, leaving tiny cooked egg bits in your brownie base.
Flatten the Cookie Dough Portions
My favorite trick here is to flatten each spoonful of cookie dough into a small disk in your hands before placing it over the brownie batter.
If you leave the cookie dough in tall, round mounds, the tops will get dark before the thick brownie center has time to bake through.
Flattening the dough slightly ensures both layers bake evenly at the exact same pace.
