For The Almond Crunch
- 1 CUP Sliced Almonds
- 1/2 CUP Unsweetened Shredded Coconut
- 2 TBSP Allulose
- 2 TBSP Unsalted Butter, Melted
- 1/8 TSP Fine Sea Salt
For The Chocolate Mousse
- 4 OZ Sugar-Free Dark Chocolate, Chopped
- 1 1/2 CUPS Heavy Cream, Chilled And Divided
- 1/3 CUP Powdered Allulose
- 2 TBSP Unsweetened Cocoa Powder
- 1 TSP Vanilla Extract
- 1/8 TSP Fine Sea Salt
For The Chocolate Shell
- 3 OZ Sugar-Free Dark Chocolate, Chopped
- 1 TBSP Coconut Oil
How To Make
Step 1
Heat the oven to 325°F. Toss the sliced almonds, shredded coconut, allulose, melted butter, and salt together, then spread the mixture on a parchment-lined baking sheet.
Step 2
Bake the crunch for 8 to 10 minutes, stirring once, until lightly toasted. Cool completely, then divide most of it among 8 small dessert cups.
Step 3
Warm 1/4 cup of the heavy cream until steaming, then pour it over the chopped chocolate. Let it stand for 2 minutes and stir until smooth, then cool until barely warm.
Step 4
Beat the remaining 1 1/4 cups heavy cream with the powdered allulose, cocoa powder, vanilla, and salt until soft peaks form. Fold the cooled chocolate mixture into the whipped cream in three additions.
Step 5
Spoon the mousse over the almond crunch and refrigerate for 1 hour.
Step 6
Melt the chocolate and coconut oil for the shell until smooth. Spoon a thin layer over each chilled mousse cup, then immediately sprinkle with the reserved almond crunch.
Step 7
Refrigerate for 10 minutes, just until the chocolate shell is crisp, and serve chilled.

Tips
Watch the Crunch Closely
Allulose browns much faster than regular sugar. Because of that, the almond and coconut crunch can go from toasted to burnt in less than a minute.
I recommend checking your oven around the seven-minute mark. Take the pan out as soon as the coconut turns light golden, because it will continue to crisp up as it cools on the sheet.
Cool the Chocolate Mixture First
You will get the best results if you let the warm chocolate and cream mixture sit on the counter until it feels barely warm to the touch.

If you fold warm chocolate into cold whipped cream, the heat will melt the cream right away. That will leave you with a runny soup instead of a fluffy, spoonable mousse.
Stop at Soft Peaks
When you beat the heavy cream, stop your mixer as soon as the peaks softly curl over at the tips.
I’ve found that if you whip the cream all the way to stiff peaks, it easily turns grainy once you fold in the chocolate.
Folding in the melted chocolate counts as extra mixing, so stopping early gives you that silky, restaurant-quality mousse texture.

Yes, you can swap in powdered erythritol or a monk fruit blend for both the mousse and the crunch. Keep in mind that erythritol can leave a slight cooling effect and may form tiny crystals once chilled.
Allulose works best here because it dissolves completely and keeps the mousse perfectly smooth and creamy.
