If you miss eating regular sandwiches on a keto diet, I have good news for you.
Today I want to share my recipe for keto cottage cheese sandwich bread. It has a great texture and slices just like traditional bread.

Many low carb breads can turn out too dense or eggy, but blending cottage cheese into the batter keeps this loaf soft and light.
It is completely low carb and keto friendly, so you can enjoy your favorite deli sandwiches without worrying about extra carbs.
The preparation is very simple, and the whole loaf is ready for the oven in just a few minutes.
Why I Love This Recipe
Holds Up to Sandwiches – This loaf stays sturdy and will never crumble when you spread your favorite toppings on it.
Naturally High in Protein – Blended cottage cheese, eggs, and whey protein give you lasting energy while staying strictly keto friendly.

Remarkably Soft Texture – The combination of cottage cheese and almond flour creates an incredibly soft crumb just like real bakery bread.
Zero Eggy Flavor – Apple cider vinegar and melted butter balance the flavor so it tastes clean without any overpowering egg taste.
Ingredients You’ll Need
- 1 1/2 cups Superfine Almond Flour
- 1/2 cup Unflavored Whey Protein Isolate
- 1 tbsp Baking Powder
- 1/2 tsp Xanthan Gum
- 3/4 tsp Fine Sea Salt
- 4 Large Eggs
- 1 cup Full-Fat Cottage Cheese
- 3 tbsp Melted Unsalted Butter
- 1 tsp Apple Cider Vinegar
How To Make
Step 1
Heat the oven to 350°F. Line an 8 1/2 x 4 1/2-inch loaf pan with parchment paper, leaving enough overhang to lift out the bread.
Step 2
Whisk the almond flour, whey protein isolate, baking powder, xanthan gum, and sea salt in a large bowl until evenly combined.
Step 3
Blend the eggs, cottage cheese, melted butter, and apple cider vinegar until completely smooth and slightly frothy.
Step 4
Pour the cottage cheese mixture into the dry ingredients and stir just until no dry pockets remain. Let the batter stand for 3 minutes so the almond flour can hydrate.
Step 5
Spread the batter evenly in the loaf pan and smooth the top. Bake for 42 to 50 minutes, until the loaf is golden, firm in the center, and a tester comes out clean.
Step 6
Cool in the pan for 15 minutes, then lift the loaf onto a rack. Cool completely before portioning so the crumb finishes setting and stays soft enough for sandwiches.

Tips
Blend the Cottage Cheese Until Completely Smooth
When you blend the wet ingredients, make sure you do not see any tiny curds left in the liquid. You want the mixture to look like smooth, creamy milk.
If any cottage cheese chunks remain, they will create wet spots inside the bread while it bakes. This can make your sandwich slices soggy and hard to toast.
Stick With Whey Protein Isolate
I recommend using pure whey protein isolate rather than a protein blend or plant protein. Isolate expands beautifully in the oven and gives the loaf the airy structure of real sandwich bread.

Other protein powders hold onto too much water and can turn your loaf into a dense, rubbery block. Also, be sure to double check that your container is completely unflavored.
Bring Cold Ingredients to Room Temperature
You will get the best results if you take the eggs and cottage cheese out of the fridge about 30 minutes before baking.
Cold ingredients will cause the warm melted butter to firm back up into little specks when you blend them. Keeping everything near room temperature helps the butter mix smoothly throughout the entire batter.

FAQ
Can I replace the whey protein isolate with collagen or plant protein?
It is best to stick with unflavored whey protein isolate because it mimics the structure of gluten and helps the loaf rise tall. Collagen or plant-based proteins absorb liquid differently and will make the bread dense or gummy.
If you need a dairy-free swap, pure egg white powder is the only alternative that yields a similar airy rise.
