How To Make

Tips
Watch the Bake Time Closely
Allulose browns much quicker than regular sugar or erythritol. From my experience, these brownies can look done on the outside before they are fully set in the middle.
Start checking them around the 11 or 12 minute mark. You want the edges to look set and the top slightly matte, but the middle should still feel soft to the touch.
If you leave them in the oven too long, keto baked goods will dry out quickly once they cool.
Do Not Overbeat the Mascarpone
Mascarpone cheese has a very high fat content and can split quickly if you mix it too long. Once it separates, the cream turns watery and grainy instead of smooth.

I recommend mixing the base until it is just blended, then pouring in the cold heavy cream. Beat on medium speed only until soft peaks form and the mixture holds its shape.
As soon as it looks thick, turn off the mixer. Finishing the stir by hand with a spatula is a great way to avoid going too far.
Get the Cheese Temperatures Right
You will get the best results if your cream cheese is soft at room temperature, while your mascarpone and heavy cream stay cold in the fridge until the moment you use them.
Cold cream cheese creates tiny white lumps that will not smooth out without overmixing the mascarpone. Soft cream cheese blends cleanly with the sweetener with zero lumps.
Keeping the mascarpone and heavy cream cold helps the mixture trap air and stay fluffy.

Yes, you can swap in decaf espresso powder for the brownies and use brewed decaf coffee for the brush.
