For the Brownie Base
- 1/2 cup Unsalted Butter
- 3 oz Sugar-Free Dark Chocolate
- 3/4 cup Allulose
- 3 large Eggs
- 1 tsp Vanilla Extract
- 1/2 cup Almond Flour
- 1/3 cup Unsweetened Cocoa Powder
- 1/4 tsp Salt
For the Pistachio Crunch Layer
- 1 cup Unsweetened Shredded Coconut
- 2 tbsp Unsalted Butter
- 1/2 cup Pistachio Butter
- 2 tbsp Powdered Allulose
- 1/4 cup Chopped Pistachios
For the Topping
- 3 oz Sugar-Free Dark Chocolate
- 1 tbsp Coconut Oil
- 1 tbsp Chopped Pistachios
How To Make
Step 1
Preheat the oven to 350F and line an 8×8 inch pan with parchment paper, leaving overhang on two sides. Melt the butter and 3 oz of dark chocolate together in a microwave safe bowl in 30 second bursts, stirring until smooth.
Step 2
Whisk the allulose into the warm chocolate mixture, then add the eggs one at a time, whisking well after each. Whisk in the vanilla. Beat the batter vigorously for one full minute so it turns glossy and slightly thickened.
Step 3
Fold in the almond flour, cocoa powder and salt until just combined with no dry streaks. Spread the batter evenly into the pan and bake for 22 to 25 minutes, until the edges are set and the center is still slightly soft.
Step 4
While the brownies bake, toast the shredded coconut with 2 tbsp butter in a skillet over medium heat, stirring constantly for 4 to 5 minutes until deeply golden and crispy. Transfer to a bowl and let cool for 5 minutes.
Step 5
Stir the pistachio butter, powdered allulose and chopped pistachios into the toasted coconut until everything is coated and forms a thick, crunchy mixture.
Step 6
Let the brownies cool in the pan for 15 minutes, then spread the pistachio crunch layer evenly over the top, pressing gently with the back of a spoon. Chill for 20 minutes to firm up.
Step 7
Melt the remaining 3 oz dark chocolate with the coconut oil until smooth. Pour over the pistachio layer and tilt the pan to cover evenly. Sprinkle with chopped pistachios.
Step 8
Refrigerate for at least 1 hour until the chocolate is set. Lift out using the parchment overhang and cut into 16 squares. Store in the fridge for up to 5 days.

Tips
Watch the Brownie Center Closely
Allulose makes baked goods brown faster and stay much softer than regular sugar.
You’ll get the best results if you pull the brownies out when the center still looks slightly soft and underdone.
If you wait for a toothpick to come out completely clean, the almond flour base will end up dry once it fully chills in the fridge.
Keep the Coconut Moving in the Pan
Shredded coconut is our low carb swap for traditional kataifi pastry, and it mimics that crisp texture amazingly well.

From my experience, shredded coconut can go from pale to burned in just a few seconds.
Keep your stove heat at medium or medium-low, and keep stirring without stopping so every flake turns an even, deep golden brown.
Let the Coconut Cool Before Mixing
Make sure your toasted coconut cools down for a few minutes before you stir in the pistachio butter and sweetener.
If the coconut is piping hot, the heat can break down the oils in the nut butter and make the filling greasy instead of crunchy.

FAQ
Can I replace allulose with erythritol or monk fruit sweetener?
You can use them, but allulose gives the brownie base the best fudgy texture. Erythritol tends to crystallize as it chills, which can make the brownies feel slightly grainy or dry.
If you decide to use an erythritol blend, use about a third less sweetener because it tastes much sweeter than allulose.
