How To Make
Step 1
Preheat the oven to 375°F and line a large baking sheet with parchment paper.
Step 2
In a large bowl, whisk together the almond flour, baking powder, garlic powder and salt.
Step 3
In a separate bowl, whisk the eggs, sour cream and melted butter until smooth. Pour into the dry ingredients and stir until a thick batter forms.
Step 4
Fold in the shredded cheddar and crumbled bacon until evenly distributed throughout the dough.
Step 5
Drop the dough onto the baking sheet in 12 rough mounds, about 1/4 cup each, leaving 2 inches between them. Keep the tops craggy and uneven, since those edges bake up crisp and golden.

Tips
Grate the Cheese From a Block
I recommend grating your own cheddar fresh off a block rather than buying the pre-shredded bags at the grocery store.
Pre-shredded cheese is coated in starch powder to keep the shreds from sticking together. That extra coating adds unwanted carbs and stops the cheese from melting smoothly into your biscuit dough.
Spoon and Level the Almond Flour
When you measure your almond flour, fluff it up with a fork first and lightly spoon it into the measuring cup.

If you scoop the cup directly into the bag, the flour packs down tightly. You’ll end up with way too much flour in the bowl, which makes the biscuits dense and dry instead of light and tender.
Let the Melted Butter Cool Down
From my experience, you should always give the melted butter a few minutes to cool down before mixing it with the cold sour cream and eggs.
If the butter is piping hot, it can start cooking the raw eggs right in the bowl. Letting it come down to warm room temperature keeps your wet mixture completely smooth and uniform.

FAQ
Can I substitute coconut flour for the almond flour?
You cannot swap them at an equal ratio because coconut flour absorbs significantly more moisture than almond flour.
If you prefer coconut flour, use about one-third of the amount called for and add an extra egg to keep the batter moist.
