- 1/4 tsp Fine Sea Salt
- 1/2 tsp Dried Thyme
For The Bread
- 1 3/4 cups Superfine Almond Flour
- 1/3 cup Unflavored Whey Protein Isolate
- 1 tbsp Baking Powder
- 1/2 tsp Fine Sea Salt
- 4 Large Eggs
- 1/2 cup Sour Cream
- 3 tbsp Melted Unsalted Butter
- 1 cup Shredded Gruyere Cheese
How To Make
Step 1
Heat the oven to 350°F. Line an 8 1/2 x 4 1/2-inch loaf pan with parchment paper.
Step 2
Melt 1 tablespoon butter in a skillet over medium-low heat. Add the onion and 1/4 teaspoon sea salt, then cook for 12 to 15 minutes until soft and deep golden; stir in the thyme and cool for 5 minutes.
Step 3
Whisk the almond flour, whey protein isolate, baking powder, and 1/2 teaspoon sea salt together. In another bowl, whisk the eggs, sour cream, and melted butter until smooth.
Step 4
Stir the wet mixture into the dry ingredients. Fold in the caramelized onion and 3/4 cup of the Gruyere, then spread the batter in the loaf pan.
Step 5
Scatter the remaining 1/4 cup Gruyere over the top. Bake for 42 to 48 minutes, until the center is set and the cheese forms a golden crust.
Step 6
Cool in the pan for 15 minutes, then transfer to a rack. Let the bread cool another 20 minutes before serving so the onion-rich crumb stays moist but cleanly set.

Tips
Cook the Onions Low and Slow
You’ll get the best results if you keep the heat at medium-low and cook the onions patiently until they turn deep golden. Rushing them on high heat will crisp the edges too fast and leave raw moisture inside.
Getting that extra moisture to cook off is essential for low carb baking. If the onions stay too watery, the middle of your loaf can turn out gummy instead of soft.
Stick to Unflavored Whey Protein Isolate
From my experience, unflavored whey protein isolate is essential for giving this loaf a tall, bakery-style lift. It acts a lot like gluten, which helps hold the bread together without needing grains.

I don’t recommend swapping this for whey concentrate or plant-based protein powders. Those absorb moisture differently and will leave you with a heavy, rubbery loaf.
Use Room Temperature Dairy
I recommend pulling your eggs and sour cream out of the fridge about 30 minutes before you start. Mixing warm melted butter into cold ingredients will make the butter firm up instantly.
When the butter hardens into tiny clumps, your batter will not mix smoothly. Room temperature dairy ensures a silky batter that bakes with a completely even crumb.

Can I omit or replace the whey protein isolate?
The whey protein isolate provides structure and helps this bread rise tall like regular bakery bread.
If you need an alternative, egg white powder works well, but skipping it completely will make the loaf dense and flat.
