Ingredients You’ll Need

  • 8 oz Sugar Free Dark Chocolate, Chopped
  • 1/2 cup Butter
  • 1/2 cup Heavy Cream
  • 1/3 cup Powdered Allulose
  • 1 tbsp Instant Espresso Powder
  • 1 tsp Vanilla Extract
  • 1/4 tsp Salt
  • 2 tbsp Cocoa Powder, For Dusting
  • Flaky Sea Salt, For Topping

How To Make

Step 1

Line a 9×5 inch loaf pan with parchment paper, leaving overhang on the long sides. Place the chopped chocolate in a large heatproof bowl.

In a small saucepan, combine the butter, heavy cream, powdered allulose, espresso powder and salt. Heat over medium, stirring, until the butter melts and the mixture just begins to simmer around the edges.

Pour the hot cream mixture over the chocolate and let it sit undisturbed for 2 minutes to melt.

Step 4

Stir slowly from the center outward until the chocolate is completely melted, thick and glossy. Stir in the vanilla. If any small lumps remain, microwave for 15 seconds and stir again.

Pour into the prepared pan, smooth the top, and refrigerate for at least 3 hours until firm.

Step 6

Lift the fudge out using the parchment, dust the top with cocoa powder and sprinkle with flaky sea salt. Cut into 16 squares and store in the fridge for up to 2 weeks.

Tips

Chop the Chocolate Very Fine

Chop your chocolate into very small, uniform pieces before pouring the hot cream over it. Large chunks will not melt easily, and extra heat can make sugar free chocolate turn gritty.

I have found that shaving the chocolate down into fine flakes helps everything melt evenly. This gives you a smooth texture without needing to reheat the bowl in the microwave.

Do Not Let the Cream Mixture Boil

Heat the cream and butter over medium heat just until you see tiny bubbles start to form around the edge of the pot. Never let the pot come to a full, rolling boil.

If the cream gets too hot, the butter can split and leave an oily film on top of your fudge.
